What do you do with a pair of pears? haha!! Okay…but seriously I had a couple of pears getting soft in my fridge, so I made some pear muffins!

  • 1 egg
  • 1/2 cup milk
  • 1/4 cup butter melted then cooled
  • 1/2 cup sugar
  • 1 tsp. vanilla
  • 1 cup flour
  • 1/2 cup whole wheat flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • cinnamon (I didn’t measure, maybe 1-2 tsp.)
  • 2 pears peeled and chopped

Mix the first 5 ingredients and in a separate bowl mix the dry ingredients. Mix the chopped pears with the cinnamon, then mix everything together.

Bake in greased muffin tins at 350 for 10-15 min. or until done.

I got 12 mini muffins plus 8 regular sized muffins out of this batch. If you make mini muffins, they don’t need as much time in the oven.

PS – I got the idea of pear muffins from this almond pear muffin recipe, which I followed loosely.

  2. You are so making me hungry right now, not fair :-) On a serious note, my grandmother used to make these often when pears were in season. I miss them.
